Now, the 40-year-old has shared another secret in a clip that has over 28,000 views: how to make your own Big Mac sauce at home.
“I have the super secret Big Mac sauce recipe,” Mike, who spent years developing new items and limited-time offers, told Whats the Jam.
“First off, I want to note there is no ketchup in Big Mac sauce.
“Number one, one cup of mayo and make sure it is Hellman’s mayonnaise.
“If you use a different mayo, it may taste different.
“A quarter of a cup of sweet pickle relish.
“You might have to Google where to find this but two tablespoons of Dusseldorf mustard.
“It’s German – the guy who created it was in a German area of the US.”
Mike goes on to explain that you’ll need:
– 1 tsp of white wine vinegar
– 1 ¼ tsp of paprika
– 1 tsp onion powder, “not granulated”
– 1 tsp garlic powder
– 1/8 tsp white pepper
– 1/8 tsp sugar
– A tiny pinch of turmeric
The final “super secret” ingredient? Vegetable protein.
But the chef says you likely won’t be able to find the McDonald’s version.
He added: “But you could use yeast extract or a tiny couple granules of MSG.”
With over 20 years’ of professional experience, as well as degrees in culinary arts and culinary nutrition, Mike knows the tricks of the trade.
He has previously shared the Big Mac recipe but this is his new-and-improved version.
He said: “Mix it up, keep it refrigerated for about 30 minutes before you use it.
“Then give it one big old mix before you serve it.”
