A triple Michelin star restaurant has gone viral after showing off a new, and rather unique, pudding – which has the flavour of an old book.
Pastry chef Jordi Roca garnered 1.8 million views with a video detailing the bizarre dish – which will set diners back £280.
In the clip, the 46-year-old can be seen separating the pages of an old book from its spine.

He then places it in a pan of water to soak the pages, before brushing over them with a cooking utensil.
Jordi then brushes over some butter, transferring the books essence to the food.
He explained the method behind the unique dessert, writing: “Select books that smell like mature paper,.
“Spread the pages with deodorised butter and let it rest overnight so that it is impregnated with the smell of an old book.
“Remove the butter with a spatula to dissolve in alcohol.

“The alcohol will evaporate and we will have the perfume of an old book.
“This technique is called enfleurage and has been used in perfumery for centuries.”
The dish has been created with the intention of it acting like a pre-dessert – an appetiser which diners should have before tucking into their pudding.

It consists of drops from the water the book was soaked in, which the diner has to smell first.
The drops are then sprinkled on the food, which also contains fragments of pages which once belonged to an old book.
In the video, the pastry chef can be seen sampling the dish, and appears to enjoy his quirky creation.
Jordi’s followers called him a “pure genius” and praised him in the comments section, as reported by What’s The Jam.
Victor commented: “You are my inspiration, sir.”

“Amazing. I can’t believe it,” added someone else.
Kimberly said: “You are such a genius!! Oh my god.”
“Unbelievable,” marvelled another user.

Alongside his brothers Joan and Josep, Jordi – who boasts one million followers – runs El Celler de Can Roca, an exquisite fine dining restaurant in Girona, Spain.
